Michael and I have been trading for about 1.5 years and I've gotten to watch his home brewing skills blow up! Michael brews some of the best looking hazy's I've seen done by a home brewer (or legit brewery alike). Reed Daw: Alright. Cool. Thanks. Welcome, everyone, to beer and a half. Today I have Michael or otherwise known as Enigma craft beer.

 

Reed Daw: On Instagram and I'll plug that one in. So you can go check him out. I'm pretty excited about this episode because I was going deep back in our conversations

 

 

Reed Daw: And we started chatting over a year ago, I think in

 

Reed Daw: I knew was Michael is one of my first trade traders to kind of get me hooked on some really good East Coast Hayes and other things. And we'll dive into all that later. But yeah. Thanks for joining us, Michael.

 

Engima Craft Beer: Grammy man.

 

Engima Craft Beer: Going on, I think actually it was after my first treehouse and Trillium trip that we treated

 

Reed Daw: Yeah yeah

 

Reed Daw: Yeah, you hit me with like a lot of ticks to I remember like all the beers that I always saw everyone posting about like some other half. Some treehouse Trillium I was like one box like it was like Christmas morning for me.

 

Engima Craft Beer: I mean, I'm in a good spot right now with Colin, it kind of sucks. But I got to reach our so many different breweries that I can hit

 

Reed Daw: Yeah, makes it pretty convenient.

 

Reed Daw: Definitely. Um, so I know a kind of fun thing that you always do on your Instagram is always which would be or should I drink like and I maybe other people have done that but I'm going to say you started it because you're

 

Reed Daw: The first person I saw doing it. So we'll crown is the originator for that and

 

Reed Daw: Yeah, that's all good. I mean everyone's still excited to see your drinking. Um, yeah. I saw you doing before we were getting started here. So maybe tell us what were the two beers, you were going through and which one did you end up choosing

 

Engima Craft Beer: So fighting started well I'll show you the crawlers right now they're only crowd during

 

Engima Craft Beer: An Iraqi like really close to where I'm staying. It's only like a five minute drive

 

Engima Craft Beer: Um, I want to say their official opening date was right before coven like January I mean I'd have to ask, Stephen Allen and then the owners.

 

Engima Craft Beer: How long ago was because I went and stopped by for equipment at a low, but they've just been putting out some crazy daisies, I mean, it's so consistent for just being a crawler

 

Engima Craft Beer: But the one that one was the no cows. It's the that's pronouncing it right. It's an all galaxy double IPA, it's their first time doing all galaxy. So it's going to be interesting to see how their yeast and processes.

 

Engima Craft Beer: Express the galaxy hot

 

 

Engima Craft Beer: And love. Yeah.

 

Reed Daw: Correct this now. Yeah, like a that just nothing special. But, well, I guess it's special asset live oh capitalized and just a classic Bavarian

 

 

Engima Craft Beer: I've ever had.

Reed Daw: That's true. I have my buddy is from Austin they drink this, like, it's the, the, like the nectar of the gods, and now I freaking love it. Oh, nice. Let's see.

 

Engima Craft Beer: These crawlers on thing is I don't like the way they pour

Reed Daw: Is it because the lid is like further away from the lip.

 

Engima Craft Beer: Or I think so, yeah.

 

 

Engima Craft Beer: The only thing that I am not to like

 

Engima Craft Beer: Bring down on a brewery or anything. I love these guys and I love what they're doing but with the crawlers, I noticed that you sent on too long. They turn a little brown quickly.

 

Engima Craft Beer: Tastes great. But like you want that I candy for Instagram, you know,

 

Engima Craft Beer: I mean, this one.

 

Engima Craft Beer: Looks like it here though so feelings.

 

Engima Craft Beer: Brown, the beer like itself turns a little brown but I mean you're filling it with CO. The Purge that can and then you're feeling the beer and then they've I think they cap on the white foam to minimize oxidation, but it's so hard to

 

Reed Daw: Yeah.

 

Reed Daw: So some oxidation gets in there and that's what color. Yeah.

 

Engima Craft Beer: Yeah, as a home brewer, that's one thing that I mean, depending on who you talk to, with their systems, it's one thing that a lot of home brewers struggle struggle with.

 

Reed Daw: Yeah, so definitely want to dive into all that, too. And when I first started looking into brain disease. Excuse me. What I would always see on forums was people getting like a weird reddish brown color like even like dark color and would that just

 

Reed Daw: Be from oxidation or what better

 

 

Engima Craft Beer: I mean, reddish would be they're using too much caramel malts I would believe um but it when I've noticed from oxidation and turns like a grayish brown. Okay. And then all kind of have like a really sweet scent, and then like cardboard taste to it.

 

Engima Craft Beer: And that's like to the extreme but pans.

 

 

Reed Daw: Oh, cool. Let's, let's go down the home brewing path. And since that's kind of what we started on. So for those of you that don't know, and you should start following him soon so you can see

Reed Daw: Michael comes out with what to me looks like some of the better Hayes's I've seen that I get even in can so I'm been encouraging him to start trying to bottle and stuff. I know that's a big venture, but

 

Reed Daw: Yeah, they look awesome. So, you know, how did you get into home brewing. Where did that whole venture start

 

Engima Craft Beer: So believe it or not getting into craft beer for me was a too juicy by two roads and like a house party and one of my roommates friends brought it. And that kind of like open the door. I was like, wow, that's not just bush shirt Bud Light and

 

Engima Craft Beer: during college so I'm or started trying more because there's like a local shop right next to me where I was living in Oneonta before

 

Engima Craft Beer: That had a bunch of crazy stuff. So I'll go and buy like A COUPLE CANS here and there and try them and then like the Saigon nutrition is a science based and like my career.

 

Engima Craft Beer: That I chose. It's really science based. So I've always loved science. And it's not just an art or like there's so many aspects to homebrew like I could tell you about and go through so many different paths. The whole time, like we could probably talk about it for days.

 

Engima Craft Beer: Yeah, that's what I love about it so like the science base me the nerd came out and it's like, what if you do this, what if you do that.

Engima Craft Beer: Just Miss possibilities. And that's kind of where like the Enigma name came from.

 

Engima Craft Beer: It's like

Engima Craft Beer: Like a mysterious person or object and like brewing is kind of like that. There's so many different ways you can go down.

Reed Daw: Yeah. And what was the was the first beer. You ever tried brewing.

Engima Craft Beer: The first beer I did was a kit and

Engima Craft Beer: I'm trying to think if it was like a West Coast IPA pretty much anything in the beginning was bottling

Oxidized

Engima Craft Beer: Edge.

 

Reed Daw: Nodes. And so what's like the, what's the main reason about or what's like the main step that maybe wasn't like perfect you're spot on that would cause oxidation

 

Engima Craft Beer: Um, so when you're bottling you're using this little one thing and you push it down in the liquid flows through the stupid.

 

Engima Craft Beer: Thing called racking came that I had. I didn't know that if you pumped it a few times and then lifted up, it would keep flowing. I thought you had to keep pumping it

 

Engima Craft Beer: Was like agitating the fear and it was a headache.

 

Engima Craft Beer: But then one day I finally was like, I'm just buying a keg, and since then. I mean, I've had a few mistakes here and there, but

Engima Craft Beer: That's like

 

Engima Craft Beer: A headache much

 

Reed Daw: Much easier for us, us

 

And so

 

Reed Daw: Yeah, that makes sense. And so now what are like the main or have you gone through pretty much all the styles from homebrew here do you stick to IPAs.

 

Engima Craft Beer: I'm mostly been doing IPAs. I did one attempt at a style to roast it but

 

Engima Craft Beer: Talk to more talus. If you've heard of them.

 

Engima Craft Beer: And I'm really close with the guys up our seasonal brew works in Saratoga, the

 

Engima Craft Beer: Us been getting some feedback. So once it starts getting a little cooler. I'm going to jump back in and take some of those tips that those guys gave me to do for Stout's

 

Reed Daw: This. That's awesome. Yeah, I think I've only had a couple of their IPAs. I haven't tried their stats, but they do pretty good stats.

Engima Craft Beer: I'm more Thomas

 

Are

 

Engima Craft Beer: Both yeah

 

Engima Craft Beer: Both are really good and mortality does like crazy stuff or there's and i mean you know if you follow them on Instagram their line is like out the door every

 

Reed Daw: Yeah, they're still there, still on the checklist for that reason, like I haven't dove into that world because they just they have so much hype. I mean, I think, for good reason, people seem to really love their beers.

 

Reed Daw: Yeah yeah

 

Reed Daw: I like they always do. What is it the hydra is is those like the fruit. It's ours that they do.

 

Engima Craft Beer: You know,

 

Reed Daw: There's three

 

Engima Craft Beer: Different routes, they do.

Reed Daw: Yeah, so I know people go get pretty hyped for those

 

Reed Daw: And so lately I've been doing just a lot of hazy is what's like the last one that you've brewed or what's like what's the next thing you're trying to brew. What, what are you sticking with

 

Engima Craft Beer: A lot of excuse me, the lower abs tend to be thin flavor. So I topped the crap out of it.

 

Engima Craft Beer: Gave it a good body and mouth feel.

 

Engima Craft Beer: Um, and like I enjoyed it a lot. I got feedback from friends and always enjoy getting that I would love to get more than just my close friends home and be able to can, but especially for this next one tomorrow I'm doing W dry, hot double mosaic Daydream calling from other and

 

Reed Daw: Yeah.

 

Reed Daw: I mean, myself and a lot of other people love other half IPAs. I think I have a triple triple cheesecake. Oh, cream IPA right now.

 

Reed Daw: I'm pretty excited the crack open so when they, when they say when they say oh cream. What does that mean, actually they're IPAs.

 

Engima Craft Beer: They just put oats and lactose and that

Engima Craft Beer: Means it's like

 

Engima Craft Beer: I don't know if it is for them. I would guess it's like a selling point

 

Engima Craft Beer: Like oh, what's in Korean like

 

Engima Craft Beer: Sounds better than just like milk.

 

Toast or someone saying lactose.

 

Reed Daw: Yeah, I appreciate him. It's a good good marketing tactic. I appreciate it. You know, real yeah

 

Engima Craft Beer: They're all good.

 

Engima Craft Beer: Though so

 

Reed Daw: Yeah. And then what about, I know I read this, like the description once, but I'm blanking. What is their high density hop charge that was HGH seed.

 

Engima Craft Beer: So they increase the Whirlpool and the dry hops is which I've learned and read

 

Engima Craft Beer: The so they're just

 

Engima Craft Beer: Um, I don't know if you follow like monkish or Trillium but I'm a lot of them are pushing hop pounds per barrel and that's why their beers are also good. So I would guess that those density pop charges and why they're so pricey is that they're like eight plus pounds per barrel.

 

Engima Craft Beer: On of hops. Yeah.

 

Reed Daw: And I mean, another great you know high density hop charge and other great marketing, you know, call to action that just pulls me into wanna buy and try, they can

 

Reed Daw: All right, I'm not mad. That sounds awesome.

 

Yeah.

 

Reed Daw: So when you when you're bringing your own do you go after a lot of clone recipes or do you come up with your own or how do you decide what like the next recipe is you're going to do.

 

Engima Craft Beer: I usually write my own

 

Engima Craft Beer: I'll be sitting at work, not gonna lie I try and think about stuff on like on a break or something. Yeah, um,

 

Engima Craft Beer: So lately I posted that I got those five pounds of Mosaic and Amarillo, and I found this website that had really good prices for them so praying. I'm sure they're going to be fine. That, um, I should probably put process or not do that. I looked at the wrong.

 

Engima Craft Beer: Yeah.

 

Reed Daw: Not good for you on. There you go.

 

Engima Craft Beer: I'm praying that they're good hops, which I don't think they would be there from like the Yakima Valley area which is known for their hops.

 

Engima Craft Beer: Yeah. And I was like, what's a really good mosaic beer that I like and not gonna lie. I was kind of hoping that it would just be a dream. And when I don't really like putting lactose in my beers, the Instagram post I did the Daydream one. So I was like, I'm just going to do it.

 

Engima Craft Beer: For a lot in

 

Engima Craft Beer: But it is going to be in there so like I just kind of went with that, like, I love other half that all their single IPA or single hop IPAs, like the citrus.

 

Engima Craft Beer: Just do it. So,

 

Reed Daw: Yeah, they do. I mean, you also you have to appease the Instagram gods, you know, whatever they vote on that's, you know, you got to go with that. And so

 

Reed Daw: We appreciate it. I think

 

Reed Daw: So yeah, I appreciate it.

 

Reed Daw: How big of batches, are you doing right now.

 

Engima Craft Beer: I'm in the for manner. I'm usually putting like five and a half to six. It depends how much I feel like boiling off and then also the starting gravity. So I'm hitting my marks.

 

Yeah.

 

Reed Daw: And you have just like a single keg that you feel to them bottle or do you have multiple they hold. Yes.

 

 

Reed Daw: Yeah, that's

 

Engima Craft Beer: Good to people.

 

Reed Daw: And so do a lot of your friends and people, you know, they're coming to you for beard, you reach out for them or or

 

Reed Daw: Or the beer guy.

 

Engima Craft Beer: I kind of reach out

 

Engima Craft Beer: Especially with the coven thing. I usually a like got this new badge. Want to try and they're like, Yeah, I'll stop by, or like my meetup and stuff like that.

 

Reed Daw: And I guess now like any reason to get out for a little bit, or do something like that. It makes it's always worth it to

 

Engima Craft Beer: Yeah, I actually found like a couple other home brewers hopefully one of these days. Like, we can do a collab or

 

Engima Craft Beer: Just grew together and learn more. Yeah.

 

Engima Craft Beer: Because everyone's different. Yeah.

 

Reed Daw: Just hang out.

 

Engima Craft Beer: Yeah.

 

Reed Daw: Human Interaction human interaction.

 

Reed Daw: And have you done any collab. I guess pre covert or maybe during any clubs, with some of the local breweries around there.

 

Engima Craft Beer: Unfortunately, no. I'm trying to just, I don't know what, maybe I'm not asking correctly or

 

Engima Craft Beer: Showing my Instagram credit because I do post a lot of craft beers, other than my which I'm trying to obviously get away from but

 

Engima Craft Beer: You know, like Bruce so much, especially with the stuff that I have on hand, but I'm

 

Engima Craft Beer: I'm hoping to hopefully either start clapping with some local, local home brewers and then Avi has I get bigger. It's just like right now. I feel weird like going in and bringing my beer and being like, hey, you want to try this and like, give me feedback if I hadn't been there before.

 

Engima Craft Beer: Or

 

Engima Craft Beer: I don't frequent often like right now.

 

Engima Craft Beer: There are two breweries that I do bring my latest patches frequently. And it's that are teasing them on the owner pairs of great guys names Kurt

 

Engima Craft Beer: And we'll do like the shares kind of thing like talk about beers and decipher them and him in a couple people try mine. And then there's another one that's called the unified and it's pretty small. So a lot of people like I'm sure you never heard of it. Beer works.

 

Engima Craft Beer: It's pretty small. I'm good. And I mean all their beers are solid and their drafts are always consistent

 

Engima Craft Beer: Right. The owners are great. So I bring my barriers up there and grab the poor and then we just talked for like a half hour.

 

Engima Craft Beer: Gotta talk, you know,

 

Reed Daw: Yeah, I mean, that's

 

Engima Craft Beer: In your house.

 

Engima Craft Beer: Yeah.

 

Reed Daw: Yeah, I guess that's how it works. Um,

 

Reed Daw: That's, that's cool, though. I mean,

 

Reed Daw: I guess like what following certain guys back like what Horace and there's like Brewhouse brewing. I mean, those

 

Reed Daw: Guys started doing that's like all those guys do. Now it's just clubs with everybody and

 

Reed Daw: Now they've gone up so many. I guess it's there, just a matter of getting in and start starting to do it. But yeah, I hope you have to Bruce, the most guys would be pretty cool.

 

Reed Daw: I've seen you. I've seen you in a couple breweries on your Instagram, though, like with some of the brewers and maybe that was just checking them out or just kind of touring and then chatting as well. They I think I've seen it a couple

 

Engima Craft Beer: Yeah, it's a mixture like someone, a lot of them are like the craft beer world like everybody I've ever met and craft beer is so friendly and so nice brewers are up most of the brewers are all gray.

 

Reed Daw: That I've

 

Engima Craft Beer: Had like a few or I'm like wow ok not going there anymore.

 

Engima Craft Beer: But for the most part, like some there so hospital and they just want to help and like

 

Engima Craft Beer: Talk beer. Like that's why they do it.

 

Reed Daw: Yeah, I mean that that's

 

Engima Craft Beer: You know, like just

 

Reed Daw: The reason you you agreed to do this call and like the whole

 

Reed Daw: Thing of me of me wanting to do this is like everyone on the beer communities. So nice like that and and the people who aren't nice tend to get kind of weeded out

 

Reed Daw: Just like put Push like further and further out. Yeah, it's like the nicest community. I've ever joined. I think it's why it's why

 

Reed Daw: I guess we're all in it. This to drink.

 

Reed Daw: Beer and

 

Reed Daw: And that's about it early and have a good time.

 

Engima Craft Beer: Well, bring any

 

Engima Craft Beer: Other together and starting conversations, you know,

 

Engima Craft Beer: Let's talk more. Once they add a few

 

Reed Daw: Yeah, that's true. I mean, it's

 

Reed Daw: It's funny at shares, you know, this is like

 

Reed Daw: If you can, like, mentally, take note of the beginning of a share versus middle vs. And we're like everyone's standing up and yelling and you know tell tell a story, is it

 

Reed Daw: Yeah, it's like, it's pretty funny.

 

Engima Craft Beer: I mean, I know this is kind of towards me. But as I know of your share the other day and I look pretty crazy. A lot of good stuff being consumed that day.

 

Reed Daw: Yeah, yeah, I've

 

Reed Daw: Been really lucky to get in like find some really good people here at one of a few of which are unlike some really good memberships. And we've been

 

Reed Daw: sticking to each other during this time.

 

Reed Daw: Because we know that like

 

Reed Daw: We all been kind of

 

Reed Daw: We all work from home.

 

Engima Craft Beer: All day, every day, so it's

 

Reed Daw: Makes it a little nicer.

 

Engima Craft Beer: And yeah, we

 

Reed Daw: Get to share some good stuff. I've gotten a lot of big tix for from those guys, that's for sure.

 

Engima Craft Beer: What spawn.

 

Reed Daw: Yeah, yeah, for sure. I love it. Um, what uh, what do you think of like all the fruit. It's our stuff. Are you into those those types of views.

 

Engima Craft Beer: Um,

 

Engima Craft Beer: I mean, I get it, I can see the people that it draws in, not gonna lie, I'm going to start playing with them and trying to make some my own because if I one day I'm lucky to open like a nano brewery or something. I'm going to obviously have to have them because people want them.

 

Engima Craft Beer: Yeah, I mean, it's one of those things that I can take it or leave it. I do enjoy a can, but I usually don't drink a whole can myself. So that's like actually

 

Engima Craft Beer: I have a high dressed on my can or in my fridge right now, February when I went there because it's just something I don't drink. It's something I care so I've just been sitting on it.

 

But

 

Engima Craft Beer: I mean, that's my standpoint, I like to share them. I can't drink. I mean, I have twice. Maybe, but I don't like drinking whole cans of those. Yeah.

 

I think

 

Reed Daw: I think I'm kind of lucky in that my girlfriend loves them. So like all get like my four ounce for and you know. She'll. She'll she loves drinking him. So it's like the perfect amount for

 

Reed Daw: For me in her it'll have, like, so it works out perfectly for our cans. Yeah.

 

Engima Craft Beer: Around six is good enough.

 

Reed Daw: And they're definitely good like it to me. It's like a Jew max or something. It's just like a juice nectar and it's delicious. Yeah, for sure. I love it.

 

Reed Daw: And what's

 

Reed Daw: I don't know if you've looked too much into it but but what's like the process of doing like that I've heard they have like a separate keg with full of fruit and then they run the beer through

 

Reed Daw: That keg, or how do you know how it works.

 

There's

 

Engima Craft Beer: A lot of places do it differently. So if we want to bring up the people who I drove out to and got screwed on that last release before they were

 

 

Reed Daw: Let's say their name because

 

Engima Craft Beer: Through it, they

 

Engima Craft Beer: Would I think. I mean, it's for how many years, they probably done it, but

 

 

Engima Craft Beer: So I've heard

 

Engima Craft Beer: Um, text that Darren can Throw a name out right there. She's really close with Drucker, who makes a lot of brains and those have inverted sours. What they do is they literally make a beer, a sour base beer that is like

 

 

Engima Craft Beer: I have heard that on tap. They do have like a keg with the fruit and then pours in and does the same thing. So it's like fresher off the keg.

 

 

 

Reed Daw: That's it, really interesting. I'd love to try this one. What does this space. Tastes like is it just tastes like liquor you think

 

 

Engima Craft Beer: Or what

Engima Craft Beer: Does this say

 

Reed Daw: Ahead and

 

Engima Craft Beer: Science are amaze

 

Reed Daw: I mean I feel like just put that release out once a year, people would like

 

 

Reed Daw: Yeah, that could that could be something that I'm going to send a message to get

 

Reed Daw: Jester King about this will see you soon. Get over there.

 

Engima Craft Beer: Sour down there.

 

Reed Daw: That's through which they just released a lambic in a box.

 

Reed Daw: Which got some really big hype here. So it's like

 

Reed Daw: Their spawn, which is like they're

 

Reed Daw: Spontaneous yeah like culture that they've dubbed

 

Reed Daw: They did their spawn. Still, which is just, yeah. These still non sparkling version of it and they put it in a box like a one and a half liter.

 

Reed Daw: So like why yeah like a franzia but a spawn. How would

 

Engima Craft Beer: That Ross.

 

Reed Daw: So, okay, that's even the the

 

 

 

 

 

 

Engima Craft Beer: Yeah, I've seen so many I'm

Engima Craft Beer: Stout this coven time go crazy money.

 

Reed Daw: Oh my gosh. Right. Yeah. Crazy.

 

Engima Craft Beer: Like gum ME THE ST Napier sanctuary.

 

Engima Craft Beer: He was posting that he got those tickets. I was like, damn, like, Yeah, you just paid that much money to buy the ticket when hopefully

 

 

Reed Daw: The meeting starts are expensive.

 

Engima Craft Beer: Let's just

Reed Daw: Face. I know like their Grand Cru in that. I mean, it's badass. I came in that like dark red velvet black boxes like

Reed Daw: You know, I can't blame people because I was looking at it like I wish I had that now.

Engima Craft Beer: Being a home brewer. Um, it kind of makes you wonder, like, how much it actually costs for those because like I know just cost.

Engima Craft Beer: Yeah, like that's what makes me think like other half and monkish and all of them, since they're charging so much they're throwing so much Hobson into

Engima Craft Beer: Like, I get it. You're spending that year, two years, where you could have been selling it to give it that age and the extra stuff. So that's why it's charging more, but um so

Engima Craft Beer: I think little ridiculous. I mean, it is a business and you got to make money. And obviously we're all still buying and so

Engima Craft Beer: But

 

Engima Craft Beer: The system.

 

Reed Daw: Me Down a keg over here have a hazy and how they said

 

 

Engima Craft Beer: It's not much

 

Reed Daw: They really. I was curious how much

Engima Craft Beer: Dollar order pint.

 

Reed Daw: Wow.

 

Reed Daw: That's crazy.

 

Reed Daw: I would not have thought that would have guessed anymore.

 

Engima Craft Beer: It's not my

 

Reed Daw: Thing, um,

 

 

Engima Craft Beer: Up for it.

 

Reed Daw: Yeah.

 

Reed Daw: I know, yeah, it was look at the time. And I'm like, man, I'm already

 

Reed Daw: Okay, cool. So this is just some simple silly questions. But what's your favorite hop.

 

Engima Craft Beer: That's tough. I want to say I have just one, but if I had to choose on like island things cetera probably

 

Reed Daw: Yeah, I mean, it kills

 

Engima Craft Beer: Yeah, it's

 

Reed Daw: It's so good.
